Food Processing Consultant
Conducted a series of sanitary design audits of beef and pork slaughtering facilities across the United States and Canada. Conducted sanitary design audits of client's processing plants to assist them in developing priorities for facility and equipment upgrading. Conducted sanitation audits for clients processing plants to assist them in developing priorities for GMP upgrading and meeting regulatory requirements. Conducted basic sanitation in-house course for the sanitary design of food and pharmaceutical processing facilities.
Course taught to engineers leading to company certification, also taught to client companies upon request. Developed sanitary design specifications for equipment for large meat processing facilities. Led client team to develop sanitary design and construction specifications for major food processing companies.
Conducted sanitary design courses at Kraft facilities and review of cheese process lines. Consulted with food processing equipment manufacturers to improve sanitary design of the food processing equipment. Reviewed and advised on sanitary design and construction of new Kraft/General Foods Beverage plant. Plant level auditing for sanitation and compliance to specifications. Developed sanitation programs at domestic and foreign plants. Assisted KGF engineers and production in developing sanitation procedures for Kool Bursts processing equipment. Acted as USDA/client interface for obtaining USDA approval of plans for renovation of an existing facility into a meat processing USDA approved facility. Developed a master plan for automating sanitation/clean up procedures for meat based canned food processor. Member of peer review groups for sanitary design critiques of ongoing food processing engineering projects.
Developed and wrote detailed operating Quality Assurance, and packaging specifications for a major juice and juice products processor. Worked with co-packers to produce aseptic, canned cheese sauce products. Part of team that planned and developed processes for new pilot plant at Green Giant, permanent variatial seed testing process lines and modular lines for new product and process developments. Developed section of master plan dealing with processing and blending of citrus juices/beverages/drinks for Tropicana. Research team member selecting equipment and services needed for new pilot plant facilities for a vegetable and prepared foods processor/marketer. Included ancillary testing laboratory facilities. Facilities were designed to produce a few packages and quantities for consumer panels and limited test market quantities. Supervised QA/QC function for canned evaporated milk processing. Carried out and led projects in Food Science (research). Project manager for setting up and operating a 3000 case/day capacity frozen Mexican food product operation at a co-packing location.
Provided formulations, ingredient, packaging sourcing and specialized equipment sourcing, and layouts. Interfaced with FDA and USDA for sanitation, developing and maintaining thermal processing procedures at plant levels. In house thermal processing authority for high and low acid canned foods in both Canada and U.S. for $250 million U.S. canned Food Company. Coordinator for developing soup processing technology, formulas, processing, equipment specifications, and procedures for Canadian production level of 250-300 cans per minute. Supervision and direction of the Quality Audit and Quality Assurance functions for canned meat spreads, canned milk, canned baked beans, dry packaged flavor enhancers, special blends, boxed chocolate candy and Mexican food products. Set up Quality Assurance/Control programs for a range of products including frozen entrees, frozen vegetables, prepared foods, canned vegetables, specialty food products (stews, meat spreads, soups, beans with pork, etc.) including supervision of three laboratories for chemical, microbiological and organoleptic evaluation of food products. Functional supervision of Quality Assurance and control Operations at nine international subsidiaries of a major food company in Australia, Canada, Costa Rica, Sweden, Norway, Holland, Mexico, United Kingdom and Venezuela with a total of 25 manufacturing locations. Products include marmalades, canned meat spreads, meat pastes, hot dogs, canned sardines, potato chips, snack foods, cured and canned sausages, canned chicken, dry mix products, pasta, tomato processing products, frozen products, Mexican and Italian products, canned/frozen vegetables and vegetable preparations.
